Identification
Shelf-like clusters with velvety blue-grey caps that fade to tan with age. Decurrent white gills, short lateral stems.
Culinary uses
- Roast whole clusters at 425°F for crispy edges
- Excellent in stir-fries, pasta, and grain bowls
- Holds shape well in braises
Growing information
Fruits at 55–65°F with 85–95% humidity. Fast colonizer and extremely forgiving. First flush 7–10 days after cutting.
Harvesting
Harvest just before cap edges flatten. Cut the entire cluster at the base with a clean knife.
